If I hear Bulletproof Coffee one more time....

Listen, I'm not knocking it because I don't believe in it. I'm knocking it because who the heck wants ghee in their coffee? Perhaps many don't mind it since so many drink it?  Not this girl. Nope, no thank you.  I will admit I have been intrigued with the idea of dialing up a cup of java to something more zuberant. However, one of my cardinal rules to healthy eating is anything I adopt making direct contact with my taste buds MUST TASTE GOOD. I associate ghee with a Costco size lard like looking tub in my grandmother's kitchen as a child and my mother in law's roti as an adult. Neither associations are motivation to douse my cup of morning joe. So the hunt began for a ghee replacement and a concoction that wouldn't violate my taste buds.

After a few struts down the health food isle at Bulk Barn & Healthy Planet, I am thrilled to share my 2018 Power Brew! Creamy, delicious, nutty goodness that makes me feel like Wonder Woman.

My Power Coffee
1 cup of your favorite coffee
1/2 handful of raw cashews ( soaked overnight work the best)
1 tablespoon coconut milk (I only use Real Thai )
1 tablespoon Organika Health Enhanced Collagen or 1 scoop Sproos Marine Collagen
1-2 small chunks of cacao butter, about 1 tablespoon ( I use Organic Traditions )
1-2 splashes of MCT Oil
A dash or two or three of cinnamon or clove or both.

Blend the cashews into a fine paste then add the rest of the ingredients and blend for frothy goodness. Note- the cashews tend to settle at the bottom of the cup so sip and swirl.

UPDATE: I started using my new immersion blender to make this coffee- WOW, super creamy.
